Meatless Monday

There are a lot of arguments for going meatless at least once a week.  There are social reasons, environmental reasons and health reasons. You're welcome to research them just Google, "Reasons to have a Meatless Monday."  When you do you will find that there are 2,310,00 different web entries on the subject so I won't take the time to bore you with my own opinions.

Anyway, my goal is to post a Meatless Monday recipe every Monday.  It will be at least vegetarian or it might even be vegan, either way I would have tested it on my own family and believe me when I tell you I have some of the pickiest eaters on the planet in my house.  So if it works in my house then it will work in yours.

The rules of my Meatless Monday recipe are:
  1. Easy to make.  It will have 5 or less ingredients and the prep time and cook time will be minimal or easily adapted to crock pot use.
  2. It will be meatless, heck it might even be vegan!
  3. It will also be wallet friendly.  Each recipe will cost less then a typical meal in a restaurant for a family of 4.
I know I've told you before but my "recipes" are hardly that.  Rarely there will be measurements or specific quantities but just know that my "recipe" will feed 4 comfortably.

I'll post the links to the posts below with some basic information about each so that you don't have to page through page after page looking for something tasty.  As I post more and more recipes I'll even try to categorize them, but that will be in the future.  Until then..Good Eating!
